of Kishu Nanko-Ume

Located in Minabe, Wakayama—the heart of the renowned Kishu Nanko-Ume region— the MiMAKi UMEBOSHI Production Facility is a family-run, traditional Umeboshi factory with over 100 years of history. Blessed with a warm climate and fertile land, Minabe faces the Kuroshio Current and is known for its abundant sunlight and excellent drainage, ideal conditions for growing high-quality plums.
We cultivate our plums with great care and love throughout the year, striving to maintain a natural environment with minimal use of chemical fertilizers.

Commitment to Environmental Sustainability

We are committed to protecting both global and local environments. The used seasoning liquid generated in the Umeboshi production process is broken down in four stages by yeast in an adjacent purification system. The water is completely purified, and the remaining odorless sludge is reused as compost.

Craftsmanship Honed Over Generations

Since 1906, we have poured our passion into making Umeboshi, carefully selecting locally grown plums from Minabe, and using the traditional technique of pickling in wooden barrels and slowly drying under the sun. This technique has been passed down through four generations. In 2009, we were honored as a ‘Hundred-Year Company’ by Wakayama Prefecture.
